Spiraled Spanakopita

I have a playful family, so when I suggested a dinner theme of “GREEN” and suggested they dress in something green, they jumped in with both feet and combed the thrift stores. My sister-in-law wore gaudy green earrings and necklaces, a green polyester pantsuit and polyester green-patterned shirt, and glitter silver shoes. My brother found green sweatpants four sizes too large, a green t-shirt, green hat, and donned a green bead necklace. I could hardly get the front door open from laughing so hard. I simply wore a green shirt and leggings and could have actually been seen in public.

Our appetizer was guacamole and green tortilla chips. I made a spiraled spanakopita for our main entree with lamb meatballs on the side, tzatziki, a green salad, and stuffed olives. For dessert, pistachio cake.
